Spring Pea Wasabi Soup



A bright and tasty soup that combines the sweetness of peas with the spiciness of wasabi to make a unique and refreshing spring dish.

Ingredients:

  • 4 cups fresh or frozen peas
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 4 cups vegetable broth
  • 1 tablespoon wasabi paste
  • Salt and pepper to taste
  • 1/2 cup coconut milk
  • Fresh mint leaves for garnish

Instructions:

In a pot, saut onion and garlic in olive oil until softened

Add peas, vegetable broth, and wasabi paste

Bring to a simmer

Season with salt and pepper

Cook for 10-12 minutes until peas are tender

Using a blender, puree the soup until smooth

Stir in coconut milk and heat through

Serve hot, garnished with fresh mint leaves
