Ingredients:
- 4 cups fresh or frozen peas
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 4 cups vegetable broth
- 1 tablespoon wasabi paste
- Salt and pepper to taste
- 1/2 cup coconut milk
- Fresh mint leaves for garnish
Instructions:
In a pot, saut onion and garlic in olive oil until softened
Add peas, vegetable broth, and wasabi paste
Bring to a simmer
Season with salt and pepper
Cook for 10-12 minutes until peas are tender
Using a blender, puree the soup until smooth
Stir in coconut milk and heat through
