Ingredients:
- 1 cup quinoa, rinsed
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 can 15 oz diced tomatoes
- 6 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon cumin
- Salt and pepper to taste
- 2 cups kale, chopped
- 1 can 15 oz chickpeas, drained and rinsed
Instructions:
In a large pot, saut onion, carrots, celery, and garlic until softened
