A flavorful and tender chicken dish with the zing of lime, the heat of chipotle, and the aroma of garlic, cooked to perfection in a slow cooker.
Ingredients:
- 4 boneless, skinless chicken breasts
- 1/4 cup lime juice
- 4 cloves garlic, minced
- 1 chipotle pepper in adobo sauce, minced
- 1 tablespoon adobo sauce
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chicken broth
- 2 tablespoons chopped fresh cilantro optional
Instructions:
Crush the chipotle pepper and lime juice into small pieces
Add adobo sauce, oregano, cumin, salt, and black pepper
Set a slow cooker on low and add chicken breasts
Pour the lime juice mix over the chicken breasts
Put chicken broth in the slow cooker
When the chicken is done, cover it and cook on low for 6 to 8 hours or high for 3 to 4 hours
Shred the chicken with two forks after it's done cooking
Serve the chicken with its cooking juices, and if you want, top it with chopped fresh cilantro
